Now cocktail bars need to give drinkers healthy food

REVOLUTION Bars is overhaulin­g its food menu as a growing appetite for healthier options put a dent in its sales. The bar operator, which is popular for its cocktails such as pornstar martinis and strawberry daquiris, said it was overhaulin­g its food offering to meet the same standard as its drinks.

Deep fried foods are being cut from the menu in favour of superfood salads and mezze boards, and more low-sugar and alcohol-free cocktails are also being introduced.

Revolution Bars chairman Keith Edelman, said: ‘Our cocktail menu is outstandin­g but our food is average to good.

‘In order to succeed we need to be outstandin­g so we’ve brought in a new food director and we will build our food business to be as innovative and attractive to the consumer as our drinks.’

Sales were broadly flat in the 26 weeks to December 30 rising by just 0.4pc, with its food business affected.

Revolution Bars suffered a £3.7m loss compared to profits of £5.1m a year earlier, after it was hit by costs associated to two failed takeovers, leasing agreements for some of its loss-making stores, and hiring a new chief executive.

Former Mitchells & Butler director Rob Pitcher will join as chief executive in the coming months.
