TODAY’S RECIPE: Winter greens puff pie

COMFORTING fare that the whole family will enjoy. Serves 4.

Ingredient­s

1 tbsp olive oil 1 onion, chopped 2 garlic cloves, crushed Pinch nutmeg 400g mixed winter greens (we used kale and cavolo nero, large stems removed and roughly chopped) 200g mascarpone 30g Parmesan, grated ½ lemon, juiced 320g pack puff pastry 1 egg, to glaze

Method

1 Heat oven to 200c/180c fan/gas 6. Heat oil in large saucepan, add onion with pinch of salt and gently fry until softened, around eight to ten minutes. Stir in garlic and nutmeg, cook for a minute, then add greens with a splash of water. Stir until wilted, around three minutes, then stir in mascarpone, Parmesan and squeeze of lemon juice. Season well and tip the mixture into the base of a 20cm pie dish.

2 Unroll pastry and brush edges of pie dish with water. Lay on the pastry, crimp the edges, add decoration or seal to edge of dish, brush with beaten egg and bake for 35 minutes until risen and golden. Cool for 10 minutes and serve.
