TODAY’S RECIPE: Broccoli bread bake

PERFECT weeknight fare. SERVES 2 300g Tenderstem broccoli, trimmed, in small chunks 2 tbsp butter 2 tbsp flour 400ml milk 1 tbsp Dijon mustard 60g Cheddar, grated 2 slices of thick crusty toast, in chunks Parmesan, to top

Method

1. Heat oven to 180c/160c fan/gas 4. Put broccoli in a casserole dish, add 1 tbsp water and roast in oven for ten minutes while you make the sauce.

2. Melt butter in small pan over medium heat, add flour and cook until it bubbles and thickens. Take off heat and whisk in a splash of milk. Return to heat and slowly add rest of milk. Stir in mustard and Cheddar. Season well.

3. Remove broccoli from oven, add chunks of toast to the dish and mix with the broccoli. Pour the cheese sauce over. Grate Parmesan over top and put back in oven for ten minutes. Put under the grill for three minutes until the top is golden and dish is bubbling. Leave to sit for five minutes before serving.
