TODAY’S RECIPE: Salmon, sesame & asparagus open sandwich

SPEEDY and delicious lunch. Serves: 2. Ingredient­s

200g asparagus tips

1 tsp sesame oil 170g tin of salmon, drained

2 tbsp Greek yoghurt

1 tsp white miso

2 slices of rye bread

1 tbsp toasted sesame seeds

Method

1 Heat the grill to its highest setting. Toss the asparagus tips in the sesame oil on a baking tray and grill for five minutes until tender.

2 Meanwhile, mix the salmon with the yoghurt and miso in a bowl, and toast the rye bread. Divide the miso salmon between the toasts, top with the grilled asparagus, then sprinkle over the sesame seeds to serve.
