TODAY’S RECIPE: Steak burrito bowl

- Ingredient­s

SMART supper. Serves: 2. 1 approx fillet steak, 250g

1 sachet fajita seasoning

2 tbsp olive oil 250g Cooked rice pouch

2 roasted red peppers, sliced

1 lemon, ½ juiced, ½ cut into wedges ½ small pack parsley, roughly chopped Yoghurt, to serve

Method

1. Coat steak with half fajita seasoning and 1 tbsp olive oil. Heat frying pan over high heat and add steak, cook for two minutes each side for medium rare, remove from pan and set aside.

2. Turn down heat to medium and add remaining oil to the pan. Tip in the rest of fajita seasoning, the rice and red peppers. Stir well so everything is coated and cook for two minutes until hot through. Add a splash of water if it starts to stick. Add lemon juice, stir through half the parsley and season.

3. Cut steak into strips. Tip rice into bowls and top with steak and a dollop of yogurt. Scatter with parsley and serve with a lemon wedge.
