TODAY’S RECIPE: Miso spinach

TOAST topper for a snack or light lunch. Serves: 2. Ingredient­s

1 tbsp miso paste

1 tbsp melted butter

200g spinach

2 tsp soy sauce

2 slices of toast

1 tbsp black sesame seeds

2 sliced spring onions

Method

1. Mix the miso paste with the melted butter, then tip into a frying pan.

2. Add the spinach, cook over a medium heat until wilted, then add the soy sauce. Divide between two slices of toast, scatter each with black sesame seeds and sliced spring onions and tuck in.
