One of the joys of summer is sharing a lovely meal and a glass of wine with friends — but when you’re trying to be healthy, entertaini­ng can be tricky.

With a little planning and recipe inspiratio­n, though, it’s possible to create a delicious dinner party that is nutritious and doesn’t scupper weight-loss plans.

This week, we have been showcasing an amazing selection of exclusive recipes created by Weight Watchers — and today’s selection is for showing off.

When you’re serving up a piquant Mexican platter or a succulent ricotta-stuffed chicken, your guests will never know you are on a mission to slim down for the summer.

STEAK & BLACK BEAN SALAD 7 SmartPoint­s per serving Serves 4

2 corn cobs, husks removed

1 red pepper, deseeded and thinly sliced

500g lean rump steak, trimmed of fat Calorie-controlled cooking spray

½ tsp ground cumin

½ tsp ground coriander

½ tsp chilli powder, plus extra to serve

400g tin black beans, drained and rinsed

125g cherry tomatoes, halved

80g watercress

½ red onion, finely sliced

1 tbsp olive oil

1 tbsp lime juice, plus lime wedges to serve HEAT a griddle pan over a medium-high heat. Cook the corn for about 15 minutes, turning often, until tender and charred. Set aside to cool. Add the peppers and cook, turning, for 2 minutes until tender. Set aside. Mist the steak with cooking spray, then sprinkle over spices. Griddle for 2 minutes each side. Cover and set aside for 5 minutes, then slice thinly. Meanwhile, use a sharp knife to remove the corn kernels. To serve, toss the corn, peppers, black beans, tomatoes, watercress and red onion with the olive oil and lime juice. Season and sprinkle over the chilli powder. Serve with the steak, with the lime wedges on the side.
