CLASSIC CHEESEBURG­ER

l 200g 5% fat beef mince l ½ onion, coarsely grated l 1 small carrot, coarsely grated l 1 small courgette, coarsely grated l Calorie-controlled cooking spray l 4 bacon medallions l 1 tsp olive oil l 4 low-fat cheese slices l 4 x 70g wholemeal sesame seed rolls, split l 4 large iceberg lettuce leaves, torn l 2 tomatoes, sliced PUT the beef, onion, carrot and courgette in a bowl. Season and mix together using your hands. Divide into four equal portions, then shape each into an 8cm patty. Chill in the fridge for 20 minutes. Cook the bacon in a large, nonstick frying pan, misted with cooking spray, over a medium heat, for 2 minutes each side. Transfer to a plate and cover with foil to keep warm. Heat the oil in the same pan. Cook the patties over a medium heat for 5 minutes each side or until cooked through. Top each with a cheese slice, cover the pan and cook for 1-2 minutes until the cheese melts. Lightly toast the rolls, then fill with lettuce, tomato, bacon and patties to serve.
