Method

1. Put red onion, cucumber, crushed garlic cloves, red pepper, tomatoes and slice of white bread in a food processor and blend until finely chopped. Tip into a large bowl with stock, olive oil, sherry vinegar, sugar and seasoning.

2. Mix well, cover bowl with cling film and put in the fridge for two hours, or overnight. To serve, pour into bowls or glasses, drizzle over a little olive oil and basil, if you wish. n
