TODAY’S RECIPE: Chicken with Spanish-style butter beans

USE up any Sunday roast chicken leftovers in this tasty lunch box. Serves 2.

Ingredients

2 roasted garlic cloves 1½ tbsp olive oil ½ lemon, zested and juiced ½ tsp smoked paprika 400g can of butter beans, drained and rinsed 2 roasted peppers 150g cherry tomatoes, halved 100g rocket 150g roast chicken 25g feta

Method

1 Squeeze the garlic cloves out of the skins and whisk together with the oil, lemon zest, lemon juice, smoked paprika and some seasoning in a large bowl.

2 Add the butter beans, roasted peppers, cherry tomatoes and rocket, and give everything a good mix.

3 Divide between lunch boxes. Top with the chicken on one side and crumble over the feta.
