TODAY’S RECIPE: Cheat’s spinach gnudi
LIGHTER version of the Italian favourite gnocchi. Serves 2.
Ingredients
200g bag spinach 150g garlic and herb soft cheese 100g fresh breadcrumbs 2 tbsp grated parmesan Method
1. Rinse the spinach in a large colander set over the sink. Pour over boiling water, leave to cool, then drain.
2. Squeeze out the excess moisture, then blitz in a food processor with the soft cheese, breadcrumbs and seasoning.
3. Rub some oil on your hands, then shape the mixture into 20 balls. Cook in a pan of boiling, salted water for two minutes. Scoop out, season and drizzle over some oil, then scatter over the parmesan to serve.
