THE FIVE-A-DAY SHORTCUT

WHAT TO EAT: Cottage pie made with minced beef and lentils (½ a portion) and a potato and sweet potato topping (one portion). Served with ratatouille (twoand-a-half portions) and broccoli (one portion) = five servings of fruit and veg.
HOW TO DO IT: For a four-person cottage pie use 240 g cooked lentils and 260 g minced beef, plus 375 g each of sweet potato and standard potato. For four servings of ratatouille, chop and sauté a medium courgette, two red peppers and an onion until soft. Add 250 g tomatoes and simmer with herbs and a dash of water. Steam or boil broccoli — and serve 80 g (two to three tablespoons) per person.
