THREE STEPS TO DELICIOUS
Yummy recipes from just 3 ingredients. This week:
1 EGG WHITE + ½ TSP PEPPERMINT EXTRACT + 250g ICING SUGAR = PEPPERMINT CREAMS MAKES 16
1. Add egg white and peppermint extract to the sugar and mix well. It should come together into a dough — you may need to dig your hands in.
2. Divide the mixture into balls, roughly the size of 20p pieces.
3. Cover a baking sheet or chopping board with greaseproof paper and arrange the balls on top, spaced well apart. Use the back of a dessert spoon to flatten them to around ¼ cm thick.
4. Leave to harden, somewhere cool, for at least three hours.
5. If you want, you can dip or drizzle them in melted dark chocolate. They’ll keep for 4-5 days in an airtight container.
