TODAY’S RECIPE: Spicy jerk potato & pineapple hash

FULL of punchy flavours. Serves: 4.

Ingredient­s

700g Maris Piper potatoes, in chunks

1 tbsp vegetable oil

4 rashers streaky bacon, cut into bite-sized pieces

40g unsalted butter

½ tbsp jerk seasoning 200g pineapple chunks

4 large eggs

½ small pack coriander, torn

½ red chilli, thinly sliced

Method

1 Bring large pan of salted water to boil. Add potatoes, boil for 7 minutes, drain and leave for 5 minutes. Meanwhile, in a frying pan fry bacon in oil for 5 minutes until crispy.

2 Add butter to pan along with potatoes and seasoning. Fry for 12 minutes. Nestle pineapple chunks in pan and cook for 3 minutes more.

3 Crack eggs over potatoes, cover pan with a lid or large plate and cook on low for 6 minutes until whites are just set and yolks still runny. Finish with coriander and a sprinkle of chilli.
