Who says carbs are bad for you? Today’s Bake-off star is personal trainer Susan Belcher in Worcesters­hire whose wholemeal scones and Irish soda bread are a healthy baking option.

The 63-year-old said:

“I set myself a challenge to become a PT for my 60th birthday, and while other personal trainers might be anti-carb, I believe in a good, varied healthy diet combined with plenty of exercise.

“My man gets me out of bed at 6am and we go for a brisk three-mile walk before breakfast. It certainly gives us an appetite!

“I’ve really got into baking during lockdown and I’m always trying new recipes. Soda bread is so easy to make and it has no nasties in it at all, just simple ingredient­s, likewise the wholemeal scones. “We love soda bread with just butter, and on a Sunday morning I usually have two slices – one with peanut butter and the other with marmalade. It’s also perfect for lunch with scrambled egg and smashed avocado!

“My philosophy is to eat well combined with plenty of activity – there’s no need to deprive yourself of any food or drink so long as you’re sensible.”

My

late dad used to make soda bread every Sunday, so this has inspired me to get buttermilk from the shops and make it myself. It’s such a quick bread to make as it uses baking soda instead of yeast. I’d also like to sign up for Sue’s bread diet. Not sure about the three-mile march though – can I do it over three weeks?
