A SWEET VALENTINE’S TREAT

Try these moreish blueberry cheesecake pancakes on Shrove Tuesday. They’ll go down a storm with the family. And they also make a lovely dessert all year round

Absence has made the heart grow fonder for the residents of two Suffolk care homes – who’ve surprised each other with Valentine’s Day cards.

After having not seen each other for almost a year, residents at Care UK’S Glastonbur­y Court in Bury St Edmunds were tickled pink to open cards from their friends at nearby Davers Court.

Up until the pandemic hit, residents of both homes used to spend a great deal of time together, teaming up for sports days, visits to the garden centre and days out to the coast at Felixstowe.

Since then they’ve been keeping in touch virtually for the last year, but it’s not the same, so having a special afternoon tea to open their Valentine’s cards from each

other has really lifted the mood. Glastonbur­y Court manager Melissa Cuevas said: “It was wonderful to see everyone’s faces light up when they realised who their cards were from.” While manager

Sally Shadbolt at Davers Court added: “We had a wonderful time at our special Valentine’s Day afternoon tea, and getting cards from our friends was the cherry on the cake!”

150g fresh or frozen blueberrie­s 1tbsp maple syrup 100g cream cheese ½ -1tbsp icing sugar, to taste 4 pancakes or crepes (see recipe, left) 4 caramelise­d biscuits or ginger nuts, crushed

50g nuts, pecans or almonds work well, roughly chopped or crushed (optional)

Simmer the blueberrie­s and maple syrup over a low heat until soft and syrupy. This should take about 3 mins.

Mix the cream cheese and icing sugar to taste. When the pancakes are cooked, top them with the blueberrie­s, sweetened cream cheese, crushed biscuits and nuts.
