Biscuit baker extraordin­aire Penny Newcombe has been testing Daily Mirror recipes.

She says: “I made these rhubarb and custard sandwich biscuits using a recipe printed recently in the paper. I love baking and have used many Mirror recipes. My husband liked these so much, this is the second batch.”

The busy 73-year-old adds: “I have been quite housebound since the pandemic began, but have not been bored.

“Besides baking, I’m studying Egyptian hieroglyph­ics as well as gardening and decorating a dolls house. “There’s not enough hours in a day.” With a son and four grandchild­ren living in America and a daughter and granddaugh­ter in Berkshire, Penny, who lives in Kent, misses her family.

She says: “The worst thing is not being able to see the children and not attending our grandson’s graduation in the States. We also enjoyed going to boot sales and auctions, so we’re looking forward to those starting again.”

JUDGE’S COMMENT:

It’s great to see readers baking Daily Mirror recipes.

And it’s even more impressive that Penny’s came out of the oven looking just like the picture in the paper.

A study has found that more than a third of couples have identified new issues in their relationsh­ip as a result of the pandemic. The survey, commission­ed by Benenden Health, also identified the unhealthy habits people are resorting to after a Covid break-up, which include eating badly, drinking more alcohol, staying in bed for longer and caring less about their appearance.
