I most certainly can, Mrs Stanford, although I will be honest – I had to look it up because even though I do it all the time I didn’t know it was called that!
So thank you for teaching me something new... indirectly.
It means to tie bacon or pork fat over a joint if meat – game bird or poultry – is to be roasted.
It’s all about making sure the meat is nice and juicy. Nadia x
