PIMM’S CUP Put cucumber, strawberries and lemon slices in a chilled glass and pour in 50ml Pimm’s. Fill up with ice and add lemon-lime soda such as 7UP, or ginger ale. Garnish with mint.
WATERMELON & STRAWBERRY SLUSH Cut one small watermelon into chunks and remove seeds. Put in a bag and freeze for several hours. Blitz with strawberries and lime juice to taste.
BRAMBLE Mix 35ml gin, 15ml creme de mure, 35ml lime juice and 15ml sugar syrup with ice. Garnish with blackberries.
BLUEBERRY MOJITO MOCKTAIL Make blueberry syrup by mixing one cup blueberries, one cup water and one cup caster sugar in a small saucepan and heat to dissolve sugar. Once cool, strain the mixture and divide between glasses. Add the juice of half a lime, fill glasses with ice and top up with soda water. Garnish with blueberries.
DARK ‘N’ STORMY Mix 50ml of dark rum and 20ml of lime juice in a cocktail shaker. Add to a glass of ice. Top with ginger beer and garnish with lime wedges.
