Can you tell me what tahini is and how necessary an ingredient it is in hummus? I’ve noticed some recipes use it and some don’t.

Tahini is a sesame paste and I love it. It can be used in a sweet or savoury way. I think it is an imperative ingredient in hummus and would not want to eat it without it.
