Chop an onion and soften it in a pan with a tbsp of olive oil and half a cinnamon stick. Add 2 cloves of finely chopped garlic and a tsp of ground cumin and cook for 2 mins. Leave to cool and add 200g freshly chopped tomatoes, a can of drained chickpeas and a tbsp of chopped coriander with a tsp of lemon juice. Season well.
