Wholegrain Blueberry Pancakes

Sometimes, a day just calls for pancakes. You can still enjoy pancakes on the MIND Diet, and these are yummy, healthy and have brain benefits from the oats and berries.
2 cups wholewheat flour 1 cup quick/instant oats Pinch of salt 4 tsp baking powder 1 tsp ground cinnamon 4 egg whites 2 cups unsweetened non-dairy milk 2 tbsp honey
½ cup low-fat Greek yoghurt 1 tsp vanilla extract 1 cup blueberries with 1 tbsp wholewheat flour Cooking spray
1 In a large bowl, combine the flour, oats, salt, baking powder and cinnamon.
2 In a medium bowl, whisk the egg whites and unsweetened non-dairy milk together. Add the honey and yoghurt and whisk until no lumps remain. Add the vanilla and whisk until combined.
3 Make a well in the middle of the dry ingredients and slowly pour the wet ingredients in. Gently fold the wet ingredients into the dry. Mix until just combined – do not overmix.
4 If you’re adding blueberries, coat them in 1tsp of wholewheat flour to prevent them from bursting and then gently fold them into the batter. 5 Coat the bottom of a large frying pan with cooking spray. Heat it over a medium flame/setting.
6 Once the frying pan is hot, use a ladle or large spoon to pour the batter, a bit at a time, onto the surface.
7 The bigger the pancakes, the more difficult they will be to flip. You will know it’s time to flip when the edges of the pancakes look dry and bubbles start to appear in the middle. At this point, flip and cook on the other side for about 2 more minutes.
8 Remove the pancake from the heat and keep covered or in the oven to retain warmth.
9 Remove the pan from heat to carefully coat it with another layer y of cooking spray. Return rn the pan to the heat, then n repeat steps 6 through 8 for the next pancakes. Serve immediately.
