Beef and rocket wraps

Makes 4 Ready in 10 minutes 4 tbsp quark Juice of ½ lemon 4 large slices of lean roast beef, all visible fat removed Small handful of rocket leaves 1 tbsp balsamic vinegar

1 Mix the quark and lemon juice in a small bowl and season to taste with salt and freshly ground black pepper. Spread the mixture over one side of each slice of beef.

2 Top with the rocket leaves, drizzle with the balsamic vinegar and roll up the beef slices. Grind over a little more black pepper to taste. Any you don’t eat now will keep in the fridge for up to two days.
