With winter setting in all you want to do is snuggle indoors with hearty, warming food. But that always comes with lots of extra calories doesn’t it? Not this time. These delicious comfort foods will cheer – and fill – you up without piling on the pounds

Chicken breast pizzas

You don’t need cheese or dough to make a pizza, as this variation proves! Fab roasted vegetables take centre stage on a tasty chicken fillet

Serves 4 Ready in 30 minutes 4 large skinless and boneless chicken breasts 4 tbsp tomato purée ¼ tsp dried chilli flakes ½ tsp dried oregano 4 medium tomatoes, thinly sliced 1 small red onion, thinly sliced into rings 2 small romano/ramiro peppers (the long, pointy ones – any colours), thinly sliced into rings and deseeded A few small fresh oregano or basil leaves, to serve Salad and vegetables, to serve

1 Preheat the oven to 200°C/fan 180°C/gas 6. Lay the chicken breasts skinned-side down on a chopping board to ‘butterfly’ them. Starting with the thicker side of each breast, slice each one in half horizontal­ly, almost across to the other side but not quite, and open them up like butterflie­s. 2 Place between two sheets of cling film and give them a light bash with a mallet or rolling pin to flatten slightly. Season lightly on both sides. 3 Place the chicken breasts on a baking tray lined with non-stick baking paper, spread with the tomato purée and sprinkle over the chilli and dried oregano. Arrange the tomatoes, onion and peppers on top and roast for 20 minutes or until the chicken is cooked through. 4 Scatter over the fresh herbs and serve hot with salad and your favourite vegetables.
