Cheats black dhal
Ingredients
1 small cauliflower, cut into florets (keep leaves) 2 tsp each cumin seeds and turmeric 3 tbsp olive oil (or melted coconut oil) 1 small onion, finely chopped 1 tbsp garlic and ginger paste 1 red chilli, finely chopped small pack coriander, stalks chopped, leaves to serve 2 x 250g pouches puy lentils 400ml can coconut milk 2 limes, 1 juiced, 1 cut into wedges to serve
Method
1 Heat oven to 200C/180C fan. Toss the cauliflower, including leaves, with 1 tsp cumin seeds, 1 tsp turmeric and 1 tbsp oil. Season, spread on a baking tray and bake for 15-20 mins or until cooked through.
2 Heat 1 tbsp oil in a pan over a medium heat and add remaining spices. Once the cumin seeds begin to pop, add the onion and cook for five mins or until softened.
