-

ONE of China’s leading Buddhist monks is facing a government probe over accusations of sexual misconduct.

Longquan Monastery abbot Shi Xuecheng – who heads the Buddhist Association of China – has been accused of harassing and demanding sexual favours from nuns. 4 sweet potatoes, peeled and diced 2 white onions, finely chopped 3 garlic cloves, finely chopped Olive oil 500g low-fat soft cheese 400ml vegetable stock 5tsps wholegrain mustard 800g fish pie mix 20g dill, roughly chopped Salt and pepper Cooked greens or salad to serve Preheat oven to 200C, 180C Fan, Gas Mark 6.

Place sweet potatoes in a saucepan, cover with boiling water and simmer for about 20 minutes, until very soft.

Drain then mash, season with salt and pepper and set aside.

In a pan, sauté onions MAKES: 6 slices PREP: 10 mins CHILL: 8 hours and garlic in a little olive oil, along with a pinch of salt, until onions have softened.

Add soft cheese, stock and mustard to pan and stir well over medium heat.

Add fish pie mix and simmer for 10 minutes, until the fish is almost cooked.

Stir through the dill. 5tbsps raw mixed nuts (not the roasted salted kind) 4tbsps mixed seeds 2 handfuls of dates, pitted 2 handfuls of goji berries or raisins 4tbsps cocoa powder 1tsps desiccated coconut 3tbsps coconut oil or olive oil Place all ingredients except oil in a food processor and blitz into coarse mixture.

You don’t need to end up with a fine mix but make sure everything sticks together to make a firm dough that holds its form.

Place the coconut oil, if using, in a saucepan and melt over a gentle heat.

Once melted, pour it or the olive oil into the food processor with the other ingredients and blend again, making sure the oil has been mixed through the dough. Transfer the dough to a square tin and press down firmly, pushing it right to the edge.

Place in the fridge overnight, or for about 8 hours, before cutting into slices. Transfer the mixture to an oven dish.

Top with sweet potato mash and place in oven on a high shelf.

Bake for about 15 minutes, or until the sauce is bubbling at the sides and the mash is starting to get crispy.

Serve with cooked greens or a salad.
