FRIULANO

Hailing from the Friuli region in the northeast of Italy, bordering Slovenia and Austria, Friulano typically offers orchard fruit and almond aromas but also a delicate acidity and minerality. Lees ageing gives it a slightly creamy texture, adding body. Yet it remains a subtle and delicate wine, making it a great match for the sea bass in salt.

£17.68 Jascots Aged on its lees for seven months, this Friulano has an intense palate of green apple, white flowers and tangy lime, with a lick of salt, too. Hints of wild herbs emerge as it opens up, and the length on the focused, lemony, saline finish is carried by the fresh acidity. Drink 2021-2022 Alc 13%

FIANO DI AVELLINO

Fiano is a structured and spicy grape variety from the hills of Irpinia in Campania. It has a smoky character combined with a crisp apple flavour, which underlines its acidity. This unique combinatio­n of aromas enhances the delicate flesh of the sea bass without overwhelmi­ng it, but it is also strong enough to stand up against the salsa verde.

£15 Harvey Nichols This has a slightly vegetal nose, with touches of baked apple, honey, blossom and saline yellow fruits. In the mouth it’s textured and honeyed, with juicy apricot and apple accompanie­d by racy acidity and ending with a fresh, nutty finish and flecks of pithy grapefruit. Drink 2021-2023 Alc 13%
