Creator of the popular Salad Love blog and cookbooks, Milanborn David explains that all too often, vegan meals are hijacked by replacemen­t meats or carbloaded to mimic classic dishes.

His latest cookbook Vegan Love steers away from all that and instead provides a formula – one dominant

‘big veg’ such as cauliflowe­r, potato, or swede, one carb or protein – always a gluten free pulse or grain, and one herby or crunchy topping for flavour and texture.

Says David: “After 10 years of experiment­ing with veggies by trying to make them sexy, appealing and desirable, I’m more and more fascinated by them.

“Recently customers have been flooded with cheap, highly refined vegan replacemen­ts for meat and dairy to satisfy the need of customers for more vegan options. And that’s ok if you are trying to just swap the old habits with new ones. But a lot of vegans are realising that those replacemen­ts are very unnatural, processed and not very healthy.

“My approach is different. This book is not about old classic recipes veganised, it’s about bringing big veggies to the next level and, together with pulses, showing people how simple and tasty they can be.”
