Have you tried… kimchi?

Kimchi is made by fermenting cabbage and carrots in a spicy sauce, and it's full of good bacteria. It's available from Tesco and Sous Chef.

Kimchi, egg & avocado on sourdough

Heat 1 tbsp olive oil in a large frying pan over a high heat. Add 200g chopped, kimchi and fry for 3– 4 mins, stirring, until it starts to caramelise. Turn down the heat a little, add 1 tsp honey and ½ tsp sesame seed oil and fry for 1 min. Remove from the heat and set side. Heat 1 tbsp oil in another frying pan over a high heat. When hot put in 2 eggs and fry for 3– 4 mins, until the egg whites are crispy around the edges and the egg yolks are still a little runny. Toast 2 large slices sourdough, then scrape 1 small garlic clove over the top of each piece of toast, rubbing it into the surface. Season with pinch of salt and drizzle over some extra virgin olive oil. Spoon the kimchi over the toast, and top with the 1 stoned and sliced avocado, fried egg and 80g feta, broken into chunks. Serves 2.
