Chipotle & tamarind glazed prawns

Serves 6 Prep 10 mins Cook 10 mins 75p a portion 180 kcals, 4g fat, 0g sat. fat, 21g sugar 100g golden caster sugar 6 garlic cloves, finely chopped 1½ tbsp chipotle paste 2 tbsp dark rum 2 tbsp tamarind purée 1-2 tbsp olive oil 30 large raw peeled prawns, defrosted if frozen

Put the sugar in a saucepan over a medium heat, then add the garlic, chipotle, rum, tamarind and 2 tbsp water. Stir, then simmer for 5 mins until you have a thick, dark sauce, then season. Can be made a few hrs ahead.

Heat a wok or large frying pan. When it is smoking hot, add the oil. Add the prawns, fry for 1 min, then add the sauce. Cook for 2-3 mins until the prawns are pink and the sauce has become sticky. Serve with lime wedges.
