Mustard greens

800g mustard greens, washed FOR THE MUSTARD DRESSING 50g Dijon mustard 200ml extra virgin olive oil 2 tsp red wine vinegar Maldon sea salt flakes
Whisk all the dressing ingredients together with a grinding of black pepper.
Blanch the mustard greens briefly in boiling water, then refresh in cold water. Reheat the greens in boiling salted water, then drain and toss with a generous amount of mustard dressing. Season to taste and serve.
