Left­over mari­nade?

If you have any mari­nade left over in the bowl af­ter as­sem­bling the skew­ers, pour into a saucepan and boil rapidly un­til it has re­duced to a sticky glaze. Use this to brush over the skew­ers as they cook – just make sure you don’t mix up the glazes if you have veg­e­tar­i­ans com­ing.
