Leftover marinade?

If you have any marinade left over in the bowl after assembling the skewers, pour into a saucepan and boil rapidly until it has reduced to a sticky glaze. Use this to brush over the skewers as they cook – just make sure you don’t mix up the glazes if you have vegetarians coming.
