I bet you’re glad to be back at work af­ter the sum­mer hol­i­days. (No, me nei­ther.) Even though it’s back to the grind, your fam­ily’s lunches don’t have to be the same old, bor­ing sand­wiches. One of my col­leagues has a cheese and ham roll ev­ery day, and I’m de­ter­mined to jazz-up lunchtimes a bit more imag­i­na­tively than that! We’ve given sand­wiches a makeover on p31 to get you out of that lunchtime rut. Plus, to help you ease back into your rou­tine, we have plenty of smart ideas for freezer fillers; stuff you can whip out of the cold and into the hot to save you time and en­ergy. Take this to work… Smoked salmon club sand­wich

In a small bowl, mix to­gether 1½ tbsp light may­on­naise, zest and juice of ½ le­mon zest and some sea­son­ing. Toast 3 slices of whole­meal bread, then spread 2 slices with the le­mon mayo. Thinly slice 2 radishes and ½ av­o­cado° / « Ì i wÀÃÌ slice of toast with radishes and av­o­cado, then top with the ÃiV ` à Vi] v Üi` LÞ y> ià from 1 hot-smoked salmon ƂNNGV and a bit of rocket. Top with the re­main­ing slice of toast and se­cure with cock­tail sticks, if you like. Halve the sand­wich and serve with the re­main­ing rocket on the side. Serves 1.
