Cheat’s pistachio ice cream

Whizz 50g pistachios in a blender until finely chopped, then roughly chop 50g

pistachios, and stir together. Fold them

through 1 litre good- quality vanilla ice cream, softened. Pop back into the tub and return to the freezer for 1 hr. PER SERVING 215 kcals, fat 14g, saturates 5g, carbs 20g, sugars 16g, protein 4g, fibre none, salt 0.1g
