Crunchy pork burger with apple slaw,

Nothing goes together better than pork and apple – apart from maybe pork scratching­s and beer. So, in this case, feel free to drink beer while eating this insane beast because you top the burger with the most delicious, naughty, savoury snack ever invented. Makes 4 burgers

400g pork mince (a fatty shoulder cut

works well, or leg meat)

1 tbsp finely chopped rosemary leaves 1 tbsp chopped sage leaves

1 tsp finely chopped thyme leaves whole nutmeg, for grating

4 seeded burger buns small pack pork scratching­s

FOR THE APPLE SLAW

1 apple, cored and cut into matchstick­s ¼ small white cabbage, thinly sliced 1 small red onion, thinly sliced 4 radishes, thinly sliced

1 tbsp mayonnaise

1 tsp English mustard

1 tsp cider vinegar 1 Make the slaw by mixing all the ingredient­s together in a bowl. Set aside.

2 Put the pork mince, herbs and nutmeg in a large bowl or on a chopping board and mix well. Next, divide the mince into four balls and flatten into patties.

3 Heat the grill, or put a griddle pan over a medium heat on the hob. Season the patties. 4 If you’re cooking outdoors, the meat might stick to the grill – remember, the grill will release the meat when it’s ready. Cook for 1-2 mins, then flip, and repeat the process until they’re almost done. Keep grilling and flipping until you create a nice golden crust – about 10-12 mins. Toast the buns. Put a patty on each bottom bun half, then top with the slaw. Finish with some crushed-up pork scratching­s, then the top bun.
