Rum ‘n’ raisin ice cream cookies

Warm 2 tbsp raisins and 2 tbsp dark rum in a small saucepan for a few minutes. Set aside to cool for 15 mins, then mix with

2 scoops vanilla ice cream. Freeze for a few hours, or until solid. Pile the ice cream on 2 oat & raisin cookies, then sandwich with 2 more cookies. Makes 2.
