Crispy ginger, onion and garlic

Fry the onions very slowly for a more intense flavour.

2-3tbsp groundnut oil 2 onions, finely sliced pinch of salt

4 garlic cloves, finely sliced 5g ginger, peeled and finely shredded

Heat the oil in a frying pan over a low-medium heat. Add the onions and salt, stir, then cover and cook for 2 minutes.

Remove the lid, turn up the heat slightly and add the garlic and ginger. Fry, stirring occasional­ly, for 5-8 minutes, or until crispy, golden and a little singed.
