Af­ter start­ing his ca­reer in New Delhi, Sang­wan moved to Lon­don where he has man­aged a string of the cap­i­tal’s finest In­dian restau­rants, such as Gymkhana and Tr­ishna. Now he’s op­er­a­tions di­rec­tor at Ja­mavar, which is nom­i­nated for the New­comer Restau­rant of the Year in our 2017 Reader Awards. You’ll no­tice his love of French la­bels and dessert wine in this month’s matches.
