Yo­tam Ot­tolenghi pop­u­larised the au­then­tic flavours of the re­gion when he opened his first epony­mous restau­rant in Lon­don in 2002.


As Noma be­came Best Restau­rant in the World in 2010, Scandi trends – fermenting, salt­bak­ing – were adopted up and down the UK.

Mod­ern Euro­pean

A trend that has stood the test of time. It refers to places that serve a va­ri­ety of cuisines on one menu, of­ten with Ital­ian, French and Bri­tish dishes.


The sushi boom on high streets char­ac­terised the late 1990s. Since then, the likes of Nobu and Roka have shown us how re­fined it can be.
