Dry lavender flowers

Lavender’s fragrance comes from essential oils held in the flowers. Newly opened lavender flowers have the best fragrance, so pick the stalks now. To preserve the flowers, tie bundles with twine and hang somewhere dry and out of strong sunlight to protect the colour of the petals – an airing cupboard or garage is ideal.
