Celeriac Crisps

These are so irresistib­ly delicious with such a wonderful nu y, sweet, yet tangy flavour, there’s no need for salt. Serves 2-4

INGREDIENT­S

½ medium to large celeriac, outside removed. 2 tablespoon­s lemon juice. 2 tablespoon­s oil.

METHOD

Preheat oven to 180C (fan oven) or equivalent. You will need 2 large baking trays lined with greaseproo­f paper. Cut into 2mm slices with a sharp knife or use a mandoline slicer (protect hand with a tea towel if the guard won’t engage, and take extra care). Toss in oil and spread over trays. Bake for 20-25 minutes or until parts of the crisps are golden brown. Switch off oven and leave to cool and crisp with door ajar.

TIP The crisps cook more evenly with a wire rack laid between the tray a and the greaseproo­f paper.
