Celeriac Salad
Like a refreshing coleslaw, but with celeriac instead of cabbage, this is perfect with cold ham or beef. Eat on the same day for best flavour and texture texture. Serves 2-3
INGREDIENTS
½ medium celeriac, prepared with lemon juice. 1 small-medium carrot. 1½½ tablespoons crème fraîche 1½½ tablespoons mayonnaise. Coarsely ground black pepper to o taste.
METHOD
Grate celeriac and carrot on coarse side of box grater in long sweeping movements. Combine with remaining ingredients.
TIP Try adding cubed or grated apple, tossed in lemon juice. It’s also great with cubes of blue cheese and toasted
walnuts. Mix the
toasted nuts with a dash of honey for an extra flavour dimension.
