Celeriac Salad

Like a refreshing coleslaw, but with celeriac instead of cabbage, this is perfect with cold ham or beef. Eat on the same day for best flavour and texture texture. Serves 2-3

INGREDIENT­S

½ medium celeriac, prepared with lemon juice. 1 small-medium carrot. 1½½ tablespoon­s crème fraîche 1½½ tablespoon­s mayonnaise. Coarsely ground black pepper to o taste.

METHOD

Grate celeriac and carrot on coarse side of box grater in long sweeping movements. Combine with remaining ingredient­s.

TIP Try adding cubed or grated apple, tossed in lemon juice. It’s also great with cubes of blue cheese and toasted

walnuts. Mix the

toasted nuts with a dash of honey for an extra flavour dimension.
