Makes 12-14 friers Th­ese are de­li­cious on their own for break­fast, lunch or tea or as an ac­com­pa­ni­ment to al­most any­thing.


110g (4oz) plain flour 1½ tea­spoons bak­ing pow­der 1 large egg 150ml (5¼fl oz) milk 225g (8oz) peas, sim­mered for 3-5 min­utes un­til tender and drained ½ small onion, finely chopped Ground white pep­per and salt to taste Suf­fi­cient oil to cover the fry­ing pan to a depth of 0.5cm, or a lile less


Sift flour and bak­ing pow­der into a bowl. Make a cen­tral well and crack in egg. Add milk slowly while in­cor­po­rat­ing the flour with a din­ner fork. Change over to a whisk once mix­ture be­comes looser. Lightly chop peas and stir into ba er with onions. Sea­son to taste. Heat oil in pan over a mod­er­ate heat and add a ta­ble­spoon of ba er for each frier. Fry 2 or 3 friers at a time for about a minute on each side or un­til golden. Drain on kitchen pa­per and eat im­me­di­ately.
