Pea fritters

Makes 12-14 friers These are delicious on their own for breakfast, lunch or tea or as an accompanim­ent to almost anything.

INGREDIENT­S

110g (4oz) plain flour 1½ teaspoons baking powder 1 large egg 150ml (5¼fl oz) milk 225g (8oz) peas, simmered for 3-5 minutes until tender and drained ½ small onion, finely chopped Ground white pepper and salt to taste Sufficient oil to cover the frying pan to a depth of 0.5cm, or a lile less

METHOD

Sift flour and baking powder into a bowl. Make a central well and crack in egg. Add milk slowly while incorporat­ing the flour with a dinner fork. Change over to a whisk once mixture becomes looser. Lightly chop peas and stir into ba er with onions. Season to taste. Heat oil in pan over a moderate heat and add a tablespoon of ba er for each frier. Fry 2 or 3 friers at a time for about a minute on each side or until golden. Drain on kitchen paper and eat immediatel­y.
