Shi­itake mush­rooms are easy to grow at home with grow­ing kits from gar­den cen­tres, or drill holes in a log and fill with in­oc­u­lated spawn plugs (from www.do­bies.co.uk). They’ve a firm tex­ture and rich, savoury flavour, which makes them a good meat al­ter­na­tive or com­ple­men­tary in­gre­di­ent. Clean mush­rooms with a damp cloth. Re­move stalks and re­serve for a beau­ti­fully flavoured stock.
