Shiitake mushrooms are easy to grow at home with growing kits from garden centres, or drill holes in a log and fill with inoculated spawn plugs (from www.dobies.co.uk). They’ve a firm texture and rich, savoury flavour, which makes them a good meat alternative or complementary ingredient. Clean mushrooms with a damp cloth. Remove stalks and reserve for a beautifully flavoured stock.
