Harvest mature cauliflowe­rs

Harvest cauliflowe­rs as soon as the head is white, firm and 15-30cm (6-12in) in diameter. If florets have started to separate the cauli has matured too much and will taste grainy. Caulis bruise easily, so handle them gently when cutting off the main stem. Use a sharp knife and keep some outer leaves attached to help protect the head until you’re ready to cook it. After harvesting, caulis don’t produce any secondary growth, so you can dig up and compost the plants if there’s no sign of disease.
