Pick redcurrant­s now that the sprigs are ripening. For speed, cut off the whole sprig and strip them later. If you’d rather take your time, the ripest currants can be picked individual­ly and the bushes revisited over a week or two. For making preserves like redcurrant jelly, the sprigs can be stripped roughly, as the pulp is eventually discarded. Redcurrant­s freeze well, are great in smoothies and, with careful picking, look great on desserts such as pavlova.
