METHOD

While the stock is heating up in a pan, place the bulgur wheat in a heatproof bowl.

Add the hot stock to the wheat and leave for 20-30 minutes until all the stock is soaked up.

Place the soaked bulgur wheat in a large mixing bowl, and add the cucumber, herbs and tomatoes. Toss well before adding the cumin, lemon juice, olives and olive oil. Season and serve.

You could vary this salad by adding any of these seasonal ingredient­s:

K steamed young beetroot

K diced radish

K grated kohlrabi

K sliced red pepper

K nasturtium leaves and flowers

The change of sweet corn tassels from white to brown indicates they’re ready to pick. Continuous cropping of peas, beans and courgettes encourages the plants to produce new pods and fruit. I’ll pick cut-and-come again salads and lettuces regularly. The leaves of celery that’s gone to seed due to the heat will be turned into celery salt. I’ll pick and dry woody herbs such as oregano, rosemary, sage and thyme to add to my kitchen cupboard.
