TOM COWARD

Kew-trained Tom spent three years as assistant to Fergus Garrett at Great Dixter. He is now head gardener at Gravetye Manor in West Sussex where he is able to indulge his passion for growing fruit, and on page 70 he explains how he is preserving Gravetye’s historic apples. “I love the astonishing variation of flavours it’s possible to grow, and I find the trees beautiful plants in their own right.”
