Phoebe

Nose: Baked cinnamon biscuits, fresh out of the oven, cut through by a hint of lemon zest.

Palate: There’s a nuttiness that has replaced the initial festive spice. Again, the citrus note is keeping things from getting too cloying in there and sweetens the whole palate up.

Finish: A relatively delicate finish, with some fresh florality to it.

Comments: I would say this is a very delicately balanced gin that is likely to be a bartender’s dream.

David

Nose: Biscuity notes of digestives and lemon shortbread are joined by lovely warm citrus.

Palate: A delicate, sweet earthiness to start, leading onto a light, creamy palate of vanilla oak and cedar, before a gradually building resinous character.

Finish: Juniper and angelica on the finish with a gentle, warming glow.

Comments: A beautifully smooth gin that would work well when mixed with cream and crème de cacao in an Alexander cocktail.
