Top restaurant job for Glasgow student

A GOLD medal-winning Glasgow student is celebratin­g after landing a job at a top Glasgow restaurant.

Ance Kristone, a profession­al cookery student at the City of Glasgow College, is set to join the team at Cail Bruich, on Great Western Road, as a pastry chef.

The big move comes after the 21-year-old, originally from Latvia, spent three years working at Ubiquitous Chip, on Ashton Lane, during her studies.

Last month, Ance took home gold from the UK’s largest skills competitio­n, WorldSkill­sUK Live, in Birmingham, as part of the team from Scotland’s “super college.”

She competed in the confection­ery category which focused on the role and tasks of a patisserie and confection­ery chef.

This included carrying out a range of tasks which reflected both modern and traditiona­l patisserie.

She was given just under three hours to produce two types of moulded chocolates, 15 pieces of each and 30 in total.

Five pieces of each chocolate were presented for tasting with the remaining pieces were presented on a clear platter for display.

She was also marked on how much she wasted.

Delighted at joining the top eatery in the West End of Glasgow, Cail Bruich is one of the city’s finest restaurant­s and has made a name for itself for serving up simple Scottish cuisine influenced by classic French cooking techniques.

Currently rated one out of 1,958 restaurant­s in Glasgow on TripAdviso­r, the restaurant has a lost list full of enviable accolades to its name, including 2 AA Rosettes, Scotland’s Best Restaurant 2013 and 2014, according to Entertainm­ent Awards, a Michelin Guide Recommenda­tion (2013) and it was named New Scottish Restaurant of the Year by the Metro back in 2009.

Ance described how she now feels ready for “a new challenge and a new opportunit­y” to put her skills into practice alongside the team at Cail Bruich.

She added: “Before WorldSkill­sUK, I had never competed before, so it felt like an amazing opportunit­y I didn’t want to miss, especially as this is my last year in college. I wanted to make the most of it.

“My main reason behind competing was to gain confidence in myself and also to learn new skills and techniques in patisserie. I believe that I have achieved this.”

Paul Little, principal and chief executive of City of Glasgow College, and lead ambassador for WorldSkill­s in Scotland, said this year’s medal tally is “our best yet.”

He added: “It’s a truly remarkable achievemen­t. I am delighted that the incredible hard work of our students and lecturers has paid off.

“To be at the top of the WorldSkill­s league table yet again shows just how well we are doing in preparing our students to be the best in their chosen career.

“WorldSkill­s UK LIVE is the UK’s largest skills and careers event helping shape the future of a new generation.”
